Hi loves, I wanted to start a new series on my blog called Baking With Mommy! Whenever I am cooking I always have my little one near me. Even though she has no idea what I am doing, I am hoping when she is older she would love to bake with me. With the holidays coming up, I thought it would be a wonderful idea to start doing some baking recipes. So I thought I would start with one of my favorite cookies!
Now before I begin, just note, I am not the best baker in the world. I do not have a fancy mixer (I used to but sadly I didn't use it much). So a lot of things is all done by hand. But a mixer would be more handy then just stirring by hand, trust me!
So today I am sharing with you one of my favorite cookies! They are Soft Oatmeal Butterscotch cookies. They are seriously one of my favorite cookies. And since butterscotch is orange, I thought these cookies look pretty festive for the fall time.
Items you will need:
- 1 cup butter softened (I just used two sticks of Blue Bonnet margarine)
- 1 cup brown sugar (can use light or dark brown sugar, I used light)
- 1/2 cup sugar
- 2 eggs (I use large eggs)
- 2 tsp of vanilla extract
- 1 tsp cinnamon (I love cinnamon so I use a lot, if you are not a fan of cinnamon you can always cut it in half)
- 2 cups of flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 cups of quick oats
- 1 bag of butterscotch chips (I loveeee butterscotch so I use a lot. If you don't like a lot of butterscotch in your cookies, just use less. I also highly recommend getting the Hersey's butterscotch chips. They taste so good!)
Baking Instructions:
- Preheat the oven to 350 degrees
- Mix butter, eggs, brown sugar, regular sugar and vanilla extract all together
- In a separate bowl combine your flour, cinnamon, baking sofa and salt all together
- Take the dry ingredients and add them to the wet ingredients
- Once it is all mixed together add your oats and then fold in your butterscotch chips
- Bake for about 10-12 minutes
